Fluffy flavorful pancakes

If looking for vegan pancakes or even just don’t have all your regular ingredients at home, this is THE recipe to whip together. Breakfast, lunch or dinner it doesn’t ever get much better than fluffy pancakes with drizzled syrup and a dollop of your favorite vegan butter.

3-step Fluffy Flavorful Pancakes

There’s nothing better than warm, fluffy, flavorful pancakes on a Saturday morning. We’ve experimented with this recipe a few different ways, but this version is by far the best. You can substitute any kind of nut butter you want -- we’ve used both peanut butter and almond butter and both are amazing! The trick to vegan pancakes is using bananas as an egg substitute. If you don’t like bananas, you can also use flax seed (1 TBSP ground flax seed + 3 TBSP water + sit for 30 minutes = 1 egg).

  • 2 ripe bananas or flax seed substitute
  • ½ oats
  • ½-⅔ cup non-dairy milk
  • ½ cup flour
  • ¼ cup your preferred nut butter
  • 1 TSP cinnamon
  • 1 TSP vanilla
  • Optional: vegan chocolate chips


  • Mix all the ingredients in a blender and blend until smooth and creamy. You may need to add more oats or milk depending on your preferred consistency.
  • Cook them on the stove over medium heat like you would any old pancake. We suggest 2 minutes on each side.
  • Top with more peanut butter, honey, syrup, butter, or any other jawn and enjoy!
